Lasagna with Bolognese

Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 medium onion
  • 3 garlic cloves
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 1 1/2 pounds ground beef
  • sea salt and freshly ground pepper, to taste
  • 3 tablespoons tomato paste
  • 2 cups red wine
  • 1 box no boil lasagna noodles
  • 1 pound ricotta cheese
  • 1 pound fresh mozzarella cheese
  • 2 cups parmesan

Directions

Prep Sauce: 1. Chop onion, carrots, celery, garlic. 2. Heat oil in heavy pan, sauté onion and garlic. 3. Add celery and carrot, sauté for 5 minutes. 4. Add beef, salt, pepper, sauté/ brown the meat. 5. Add tomato paste, sauté 3 minutes, then add wine. 6. Reduce liquid by half. Make Lasagna: 1. Preheat oven to 350. 2. Slice mozzarella, grate parmesan. (if using regular lasagna noodles cook according to package instructions). 3. In bottom layer of baking pan: place 1/3 of the sauce. 4. Next: Place first layer of noodles. 3. Next: Layer half of each of the cheeses (ricotta, mozzarella, parmesan), and 1/3 of the sauce. 4. Next: Second layer of noodles...repeat pattern as needed 5. Bake: 350 for about 45 minutes (first 30 mins keep pan covered with foil)
