Bolognese Sauce

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 1.5 pounds ground beef
  • sea salt and freshly ground pepper, to taste
  • 3 tablespoons tomato paste
  • 2 cups red wine

Directions

Prep: 1. Chop onion, carrots, celery, garlic. Make: 1. Heat oil in heavy pan, sauté onion and garlic. 2. Add celery and carrot, sauté for 5 minutes. 3. Add beef, salt, pepper, sauté/ brown the meat. 4. Add tomato paste, sauté 3 minutes, then add wine. 5. Reduce liquid by half. Note: add more water as needed along the way
