Prep: 1. Chop onion, carrots, celery, garlic. Grate cheese. 2. Boil water and cook spaghetti according to package instructions while preparing sauce. Make: 1. Heat oil in heavy pan, sauté onion and garlic. 2. Add celery and carrot, sauté for 5 minutes. 3. Add beef, salt, pepper, sauté/brown meat. 4. Add tomato paste, sauté 3 minutes, then add wine. 5. Simmer to reduce liquid by half, about 20-30 min. 6. Serve over pasta and top with cheese.
