Steak with Cauliflower and Crisp Bread Crumbs

Ingredients

  • 1 baguette, torn into small pieces (about 2 cups)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons roughly chopped fresh italian parsley
  • 1 tablespoon capers
  • 6 cloves garlic, unpeeled
  • 1 pound strip steak
  • sea salt and freshly ground pepper, to taste
  • 1 head cauliflower, cut into florets

Directions

Prep: 1. Heat oven to 400° F. 2. On a rimmed baking sheet, toss the bread with 1 tablespoon oil. Spread in an even layer and bake until golden and crisp, 5 to 6 minutes. 3. Transfer bread to a bowl and toss with parsley and capers; set aside. Make: 1. Heat 1 tablespoon of oil and the garlic in a frying pan over medium-high heat. 2. Season steak with salt and pepper and place in pan. 3. Cook until browned, 2 to 3 minutes per side. Transfer steak and garlic to baking sheet. 4. Place baking sheet in oven and roast steak to desired doneness, 6 to 8 minutes for medium-rare. Let rest at least 5 minutes before slicing. 5. Meanwhile, add the cauliflower and 1/2 cup water to the frying pan and cook, covered, until tender and the water has evaporated, 6 to 7 minutes. Sprinkle with the reserved crumbs; serve with the steak and garlic.
