Prep: 1. Slice/mince/chop onion, shallots, garlic, cilantro. 2. Cut 1 lime into wedges for serving. Juice remaining limes. 3. Combine onion, shallots, garlic, lime juice, oil, chili powder, salt and pepper into a large bowl and toss to combine. 4. Add chicken, cover and marinate in refrigerator for 15-60 minutes. Make: 1. Preheat oven to 375 degrees. 2. Place chicken in baking dish and bake for 30-35 minutes, until cooked through. 3. Use two forks to shred chicken. Garnish with lime wedges and fresh cilantro.
Great paried with cilantro cauli-rice! Omit or reduce the chili powder if you don't like spicy.
