Prep: 1. Zest orange. Make: 1. Using a handheld or stand mixer, cream butter and sugar. Beat until light and fluffy, about 3-5 minutes. 2. Beat in egg, scraping sides occasionally 3. Mix in orange zest and molasses. 4. In a separate bowl, sift together spices, salt, flour and baking soda. 5. Using a wooden spoon (or the paddle attachment on a stand mixer) slow mix dry ingredients into butter mixture. 6. Divide dough in half, wrap each half in plastic wrap and refrigerate for at least 30 minutes or up to 3 days. 7. Pre-heat oven to 350 degrees. 8. On a well floured surface roll out dough to 1/8 inch thick (if you're not doing shapes you can do 1/4" thick and just bake a little longer). 9. Using a spatula, transfer cookies to a baking sheet and bake for 3-5 minutes. Watch closely, they go from almost done to done very quickly. 10. Allow cookies to cool and then enjoy or decorate.
