Broiled Halibut with Lemon and Basil

Ingredients

  • 1 lemon
  • 2 tablespoons fresh basil
  • 1 1/2 pound halibut fillets
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 2 teaspoons extra virgin olive oil

Directions

Prep: 1. Juice half the lemon, cut other half into wedges for garnish. 2. Mince basil. 3. Preheat broiler to high. Make: 1. Place halibut on a baking pan; rub all over with salt and pepper. Drizzle with olive oil; broil until fish turns opaque in center, about 10 to 12 minutes. 2. To serve: drizzle with lemon juice, sprinkle with basil, and garnish with lemon wedges.

Notes

Simple, delicious and great for a quick weeknight or a simply elegant dinner party. Parsley or any fresh herb you like can be substituted for the basil if you prefer.
