Balsamic Roasted Carrots

Ingredients

  • 1 pound carrots
  • 3 tablespoons water
  • 4 tablespoons balsamic vinegar
  • 1 clove garlic, minced
  • 2 teaspoons honey
  • pinch red pepper flakes, optional

Directions

Prep: 1. Preheat oven to 400. 2. Peel carrots (if desired). Make: 1. Arrange carrots on a baking sheet. 2. Whisk together water, balsamic vinegar, garlic, honey, and red pepper flakes, if using. Drizzle over carrots and toss to coat. 3. Place in the oven and roast for 50-60 minutes, until fork tender and browned.
