Prep: 1. Heat oven to 400. 2. Drain and rinse beans. Make: 1. Combine the beans, corn, and salsa. 2. Place 4 tortillas on a parchment- or foil-lined baking sheet and sprinkle with half the cheese. 3. Using a slotted spoon, top with the bean mixture. Sprinkle with the remaining cheese; top with the remaining tortillas. 4. Bake the quesadillas until the cheese has melted, 5 to 7 minutes. 5. To serve cut each quesadilla into 6 pieces.
These are also great with left over shredded chicken or pork!
