Prep: 1. Slice onions, yellow squash, and mushrooms. 2. Chop cilantro. Make: 1. In a large skillet, heat olive oil, add onion, squash, mushrooms, and cilantro. 2. Stir and cook for a minute or two, then cover and cook 5 minutes or until squash is soft. 3. In another large skillet, warm one tortilla directly on the dry surface. Sprinkle 1/4 cup cheese on top, then add some of the squash filling to one half and fold over the other half. 4. Cook for a few minutes on each side. Remove from heat. Repeat with remaining ingredients.
