Make the Salsa: 1. Finely dice the jalapeno and garlic. 2. Chop tomatoes, avocado and cilantro. 3. Juice lime. 4. Mix all together with salt and stir to combine. Set aside. (If not using right away, place a piece of saran wrap inside the bowl and directly over salsa to prevent discoloration and refrigerate.) Prep: 1. Pre-heat grill. 2. Thinly slice cabbage. 3. Cut 2 limes into wedges for garnish. Make: 1. Mix the olive oil, chili powder, salt, cayenne pepper and shrimp in a large bowl. Stir until shrimp are evenly coated with seasoning. 2. Grease grill and place shrimp on grill and cook until just opaque, about 2-3 minutes per side. Remove from grill and cover to keep warm. 3. Grill the tortillas until warm and slightly charred, about 20 seconds per side. 4. Serve by spooning avocado salsa generously over warm tortillas, then top with shrimp and red cabbage. Serve tacos with lime wedges on the side.
