Prep: 1. Slice onion. Mince garlic. Make: 1. Combine salt, chili powder, cumin, garlic, pepper and oregano in a bowl. 2. Rub spice mixture all over the pork. Cover and refrigerate over night. (or quickly sear on each side if you don't have time to let it sit) 3. Place onion on the bottom of the slow cooker. Place the pork on top of the onions. Pour beef broth and water over the top. 4. Cover and cook on low for 8 hours. 5. Remove from slow cooker. Allow to cool slightly. Discard bone and pan juices. Using a fork and spoon shred meat.
If possible cover and refrigerate the pork overnight after rubbing it with the spice mixture. You can also skip that and just sear the roast quickly after rubbing it with the spices. This dish is a great option for creative leftovers, pork tacos and pulled pork sandwiches are some of our favorites.
