Pan-Seared Pork Chops with Roasted Avocado

Ingredients

  • 4 thick-cut bone-in pork chops
  • sea salt and pepper to taste
  • 1 tablespoon canola oil
  • 3 firm avocados, cut lengthwise into quarters
  • 1 teaspoon extra virgin olive oil

Directions

Prep: 1. Pre-heat oven to 400. 2. Season the pork chops lightly with salt and pepper. 2. Slice avocados lengthwise into quarters (leave peel on). Season with salt and pepper. Make: 1. Drizzle avocado sparingly with olive oil and rub to coat. Arrange them cut side up on the baking sheet and roast for 15 to 20 minutes; the edges will be lightly browned. 2. Heat the vegetable oil in a large, ovenproof skillet over medium-high heat. Once hot, add the pork chops; sear until golden brown in spots, 4 to 6 minutes for each side. 3. Move the chops to the oven for 4-5 minutes. 4. Serve avocados alongside pork chops.

Notes

Roasted avocados?! Exactly what we thought, but it is a great way to use the firm avocados you so regularly find at most grocery stores. This is a great place to use avocado oil if you have it on hand.
