Spinach and Egg Pizza

Ingredients

  • 1 garlic clove, minced
  • 3 tablespoons fresh oregano
  • 1 pound fresh spinach
  • 1 ball pizza dough
  • 1/2 cup ricotta cheese (or greek yogurt)
  • 1/2 cup parmesan cheese, plus more for garnish
  • 4 eggs
  • sea salt and freshly ground pepper, to taste
  • 1 tablespoon extra virgin olive oil, to finish
  • 1 tablespoon cornmeal

Directions

Prep: 1. Mince garlic and oregano. 2. Chop spinach. Grate parmesan Make: 1. Heat oven to 450 (500 if your oven goes that high). 2. Grease pizza pan, sprinkle with cornmeal. 3. Mix spinach in a bowl with ricotta, garlic, salt, pepper, and oregano. 5. Spread spinach mixture on the dough. 6. Sprinkle with parmesan. 7. Make 4 indentations to help hold the eggs in place and crack eggs in the indentations. 8. Bake pizza about 10-15 minutes, until egg white is set and yolk is still loose. (the egg cooking really depends on the oven so watch them a little) Serve: Sprinkle with cheese and drizzle olive oil as desired. Eat immediately.

Notes

If you like tomato sauce you can easily add your favorite kind before spreading the spinach mixture. If you are an egg lover and aren't using jumbo eggs you can usually fit 6 on this pizza and get egg in every bite, YUM! We LOVE homemade pizza, it's faster and easier than take out.
