Prep: 1. Mince garlic and oregano. 2. Chop spinach. Grate parmesan Make: 1. Heat oven to 450 (500 if your oven goes that high). 2. Grease pizza pan, sprinkle with cornmeal. 3. Mix spinach in a bowl with ricotta, garlic, salt, pepper, and oregano. 5. Spread spinach mixture on the dough. 6. Sprinkle with parmesan. 7. Make 4 indentations to help hold the eggs in place and crack eggs in the indentations. 8. Bake pizza about 10-15 minutes, until egg white is set and yolk is still loose. (the egg cooking really depends on the oven so watch them a little) Serve: Sprinkle with cheese and drizzle olive oil as desired. Eat immediately.
