Prep: 1. Chop parsley. Mince garlic. 2. Juice and zest half of the lemon. Make: 1. Combine the yogurt, olive oil, garlic, oregano, salt, and pepper, parsley, lemon zest and juice in a bowl. 2. Add the chicken pieces and marinade for 30 minutes. 3. Pre-heat the oven to 375. 4. Place the chicken pieces in a large baking dish and bake for 45 minutes, or until golden brown on top.
Ironically, we would recommend regular yogurt over greek yogurt here. If you do use greek we would suggest thinning it with a couple tablespoons of milk.
