Chinese Five-Spice Roast Chicken

Ingredients

  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1 teaspoon five-spice powder
  • 2 cloves minced garlic
  • 1 tablespoon vinegar
  • 2 teaspoon sesame oil
  • 1 whole chicken

Directions

Prep: 1. Preheat oven to 400 and line a roasting/baking pan with foil. 2. Mince garlic. Make: 1. Combine all of the ingredients (except chicken) in a small mixing bowl. 2. Gently rub mixture under the skin of the entire chicken. This is easiest starting from the neck end of the chicken, be careful not to tear the skin but don't worry if it does. 3. Place the chicken in the baking pan, leg side down, and bake for 15 minutes, plus 20 minutes per pound of chicken (1 hour and 15 minutes for a 3 pound chicken). Chicken is done when juices run clear and a meat thermometer placed in the thigh joint reads 165.

Notes

If you don't have five-spice powder on hand use a scant 1/4 teaspoon of as many of the following as you have: cinnamon, cloves, ground fennel, star anise (ground), white (or black) pepper.
