Almond Clementine Cake

Ingredients

  • 5 clementines
  • 6 eggs
  • 1 cup plus 2 tablespoons sugar
  • 2 1/3 cups blanched almond flour
  • 1 1/4 teaspoon baking powder
  • aluminum foil

Directions

Prep: 1. Wash clementines, remove any stems, and put the (whole) clementines into a pot of water, bring to a boil. 2. Reduce heat to simmer, cover, and cook on simmer for 2 hours. Drain in a colander. Make: 1. Preheat oven to 375. Grease a round springform pan, line with parchment paper, and grease again. 2. Add clementines to food processor and pulse until pureed - peels and all (or chop very finely by hand). If they are seedy you can halve them first to remove seeds. 3. Whisk together the eggs. By hand, stir in clementine mix, sugar, almond flour and baking powder. 4. Pour into prepared pan and bake for 1 hour (cover with foil after 30 min. to minimize browning).

Notes

This recipe is SUPER easy (just 5 ingredients) and fast (at the end). However, plan ahead because FIRST the clementines simmer for 2 hours. We love to fancy it up by sifting a little powdered sugar over the top.
