Homemade Chocolate-Peanut Butter Cups

Ingredients

  • 1/4 cup dark brown sugar
  • 3/4 cup powdered sugar
  • 3 tablespoons butter (room temperature)
  • 1/2 cup smooth peanut butter
  • 2 cups milk chocolate chips (roughly one 12 ounce bag)
  • 1 1/2 cups dark chocolate chips

Directions

Prep: 1. Allow 3 tablespoons butter to soften to room temperature (or warm slightly in a microwave without melting). 2. Fill a cupcake pan with paper liners. Make: 1. While water is boiling, in a food processor, pulse together the brown sugar, powdered sugar, butter, and peanut butter (or use an electric mixer). 2. Melt the chocolate chips gently in a saucepan (over low heat) or in the microwave. 3. Meanwhile, using hands, form the peanut butter mixture into 12 round balls. 4. Pour melted chocolate into bottom of each cupcake liner. Then place peanut butter ball in middle of each. Finally, pour melted chocolate on top of each one until covered. 5. Refrigerate for 30 minutes.

Notes

These are sure to satisfy any sweet tooth! If you like things on the less sweet side you can halve the brown sugar, or leave it out entirely.
