Prep: 1. Preheat oven to 350. 2. Remove the papery outside of the garlic cloves, but leave the primary skin. Make: 1. Heat oil over high heat in a dutch oven. 2. Sear chicken on skin side (this may take two batches depending on the size of your dutch oven). Remove from pan. 3. Add in scallions, thyme and half the garlic. Add chicken back to dutch oven skin side up. 4. Top with remaining garlic, lemon juice, salt and pepper. 5. Cover and place in oven for 1 1/2 hours, or until chicken is done through. 6. When serving, squeeze the garlic out of it's skins and use as a sauce for the chicken (it's also great on a baguette!)
This is our take on the traditional favorite Chicken With 40 Cloves of Garlic, we found that you don't quite need 40 cloves if you're just serving 4. But if you're doubling this or using a whole chicken by all means use all 40! If you have an open bottle of white wine on hand, you can substitute white wine for the lemon juice.
