Pork Loin Stuffed with Chorizo, Apples, and Sage

Ingredients

  • FOR THE STUFFING:
  • 3 ounces ground chorizo sausage
  • 1/3 cup breadcrumbs
  • 3 scallions, sliced
  • 1 Granny Smith apple, diced
  • 1/4 cup of fresh sage, chopped
  • 1 tablespoon lime juice (from about 1/2 lime)
  • FOR THE PORK:
  • 1 1/2 pound pork loin
  • 2 tablespoons extra virgin olive oil
  • Sea salt and freshly ground black pepper to taste
  • FOR THE SALSA:
  • 2 Granny Smith apples, diced
  • 1/2 cup chopped fresh cilantro
  • 1 cup diced red onion
  • 1 tablespoon honey
  • 2 tablespoons extra-virgin olive oil
  • Sea salt and freshly ground black pepper to taste

Directions

Prep: 1. Preheat oven to 425. 2. Dice 1 apple (for stuffing) and toss with juice of 1/2 lime to prevent browning. 3. Slice scallions and sage. Stuffing: 1. Blend together by hand in a bowl: chorizo, breadcrumbs, diced apple, scallions, and sage. Pork: 1. Carefully bore a hole straight through the middle of the pork loin using a sharp knife. 2. Use your hands to enlarge the hole, it should be about 1-2 inches diameter. 3. Carefully fill the hole with stuffing (pack it in). 4. Gently place the pork in roasting pan and rub top and sides with olive oil, salt and pepper. 5. Roast ­in oven about 45 minutes until cooked through (a meat thermometer should register 140). Let rest before slicing. While Pork is roasting, make the Salsa: 1. Chop remaining apples, cilantro, onion. 2. Stir together apples, cilantro, onion, juice of 2 limes, honey, olive oil, salt and pepper in a bowl. Serve: Sliced pork loin with salsa on side

Notes

This dish is easier then it might appear. There are three parts to make: (1) the stuffing, then (2) the pork with the stuffing inside it and finally (3) a delicious accompanying salsa (don't skip the salsa!)
