Black Eyed Peas with Kale and Pancetta

Ingredients

  • 1/2 onion, chopped
  • 2 tablespoons pancetta
  • 2 whole ripe tomatoes
  • 1 bunch lacinato kale, stems removed, chopped
  • 16 ounces black eyed peas
  • 1 tablespoon extra virgin olive oil
  • sea salt and freshly ground black pepper, to taste
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano

Directions

Prep: 1. Chop onion, pancetta, tomatoes and kale. Make: 1. Prepare black eyed peas according to package instructions. 2. Heat oil in pan. When hot, saute onions, pancetta, tomatoes, kale and cooked black eyed peas until onions are tender. 3. Season with salt and pepper and dried herbs.
