Pesto Pea Salad

Ingredients

  • 5 ounces baby spinach leaves
  • 10 ounces fresh peas
  • 1/4 cup prepared pesto
  • 1/4 cup parmesan cheese
  • 1 teaspoon sea salt, if desired
  • 2 tablespoons toasted pine nuts (pignolis)

Directions

Make: 1. Place the spinach and the peas in a large bowl. 2. Add pesto and parmesan, then sprinkle with the salt (if using). 3. Toss well, sprinkle with pine nuts, and serve.
