Chicken with Goat Cheese and Basil

Ingredients

  • 6 boneless chicken breasts, skin on
  • 8 ounces garlic herb goat cheese
  • 1/4 cup fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • sea salt and freshly ground pepper, to taste

Directions

Prep: 1. Preheat oven to 375. 2. Slice goat cheese into 1/2-inch-thick slices Make. 1. Place chicken breasts on a baking sheet. 2. Place 1 or 2 slices of goat cheese and a large basil leaf under the skin of each chicken breast. 3. Pull the skin over as much of the meat as possible so the chicken won't dry out. 5. Rub each piece with olive oil, then sprinkle generously with salt and pepper. 6. Bake the chicken for 35-40 min., until the skin is lightly browned and the chicken is just cooked through.
