Prep: 1. Mince garlic. 2. Chop basil, parsley, and thyme leaves. Make: 1. Heat olive oil in a saute pan large enough to hold all the tomatoes in one layer. 2. Add the garlic and cook over medium heat for 30 seconds. 3. Add tomatoes, basil, parsley, thyme, salt, and pepper. 4. Reduce heat to low and cook, uncovered, for 5 to 7 minutes, stirring occasionally, until tomatoes begin to lose their firm round shape. 5. Serve hot or at room temperature, sprinkled with fresh herbs.
While we could eat raw cherry tomatoes all summer we like to switch it up with these every once in a while. Cooking really brings out the sweetness in these tomatoes.
