Prep: 1. Mince parsley, dill, and scallions. Make: 1. Combine in saucepan: rice, 1 3/4 cups water, salt, and olive oil. Bring to boil over high heat. 2. Reduce heat to low, stir once, and simmer, covered tightly, for 15 minutes. 3. Turn off heat and allow rice to sit covered for 5 minutes. 4. Add parsley, dill, scallions, and pepper. Fluff with a fork, and serve warm.
Make this your own by using any fresh herbs you have on hand. Use thyme, and rosemary to go with Italian food, cilantro and cumin for a Mexican feel, or fresh ginger and red chilies for some Asian flair. This is great with whatever kind of rice you have on hand.
