Parsley Potatoes

Ingredients

  • 2 pounds small red potatoes
  • 4 tablespoons unsalted butter cut into small cubes
  • 2 tablespoons finely chopped fresh italian parsley
  • sea salt and freshly ground pepper, to taste, to taste

Directions

Prep: 1. Chop parsley. Make. 1. Bring a large pot of salted water to boil, add potatoes, return water to boil. 2. Reduce heat, simmer until potatoes can be pierced with a fork but are not completely tender, 8-10 minutes. 3. Drain and remove from water. 4. If desired, use a paring knife to peel potatoes. 5. In a large pan, bring 1/2 cup water to a boil. Add potatoes over medium heat. 6. Add butter a few pieces at a time, swirling pan, until completely incorporated, 3 to 4 minutes. Continue to cook, swirling skillet often and gently tossing potatoes, until sauce is thickened and potatoes are tender (about 2 minutes more). 7. Remove from heat and toss with parsley, salt and pepper to taste.
