Prep: 1. Chop: onion, garlic, basil, oregano. Grate cheese. 2. Defrost cheese ravioli if frozen. Make: 1. Heat olive oil in a large pan. Sauté onion and garlic until golden. 2. Add diced tomatoes, basil, and oregano, stir and simmer 5 minutes. 3. Remove half of tomato mixture and set aside. 4. Top tomatoes in pan with a layer of uncooked ravioli, then a sprinkling of Parmesan cheese, a cup of marinara sauce, and remaining tomato mixture. 5. Add remaining raviolis into pan, and top with marinara sauce and mozzarella. 6. Cover pan with a lid or layer of foil; simmer over low heat for 15 minutes. 7. Remove from heat and let pan sit for a few minutes. Serve straight from the pan.
