Bean Salad with Lemon, Capers, Herbs

Ingredients

  • 2 (15 ounce) cans cannellini beans, drained and rinsed
  • 2 cups green beans, trimmed and cut into 1" pieces
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh chives, chopped
  • 1/4 cup capers
  • 2 tablespoons freshly grated lemon zest
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 teaspoon crushed red pepper flakes
  • sea salt and freshly ground black pepper, to taste

Directions

Prep: 1. Boil water for beans. 2. Cut ends off of beans. Chop chives and parsley, juice and zest lemon. Make: 1. Blanch green beans in a large pot of boiling salted water until crisp-tender, about 3 minutes. Drain and run under cold water to halt cooking 2. Toss all ingredients together in bowl.
