Grilled Berbere Chicken

Ingredients

  • 4 chicken breasts (or thighs)
  • 3 tablespoons berbere
  • 3 teaspoons cinnamon
  • 3 tablespoons brown sugar
  • 1/2 teaspoon sea salt
  • 1/4 cup extra virgin olive oil

Directions

Prep: 1. Mix together spices and olive oil to form a paste Make: 1. Rub spice mix all over chicken. 2. Grill chicken, covered, on medium heat for about 7-10 minutes per side. or until cooked through.

Notes

Try out this super easy recipe using the Ethiopian spice mix berbere, which means "hot" in Amharic. It's got that perfect little kick! You can find it at many grocery stores or make your own using a recipe from the internet. Bonus tip: Make a little extra berbere paste and rub it on some sweet potato wedges to throw on the grill 5-10 min. before the chicken.
