Pumpkin Bread (or Muffins)

Ingredients

  • 2 tablespoons unsalted butter (room temperature)
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 cup sugar
  • 1 can pumpkin puree
  • 1 1/2 cups sifted all purpose flour
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon sea salt

Directions

Prep: 1. Leave out butter to soften/come to room temperature. 2. Preheat oven to 375. 3. Grease loaf pan. Make: 1. Mix together buttermilk, egg, and butter. 2. Add sugar and pumpkin, mix well. 3. In large bowl, sift together flour, baking soda, salt, nutmeg, and cinnamon. 4. Add wet ingredients to dry ingredients, mix until combined. 5. Bake at 375 for 30-45 minutes, or until toothpick inserted comes out clean.

Notes

If you prefer you can substitute 1/2 cup of milk and 1 teaspoon of vinegar or lemon juice for the buttermilk, just let it sit for about 10 minutes so that the milk has a chance to sour. If you prefer to make muffins follow the same directions but bake in a greased muffin tin for 15-20 minutes.
