French Potato Salad

Ingredients

  • 2 pounds new potatoes
  • sea salt and freshly ground pepper, to taste
  • 1/2 cup dry white wine
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 cup chopped fresh italian parsley
  • 1/2 cup chopped scallions

Directions

Prep: 1. Boil water in a large pot. 2. Peel potatoes. Make: 1. Boil potatoes in salted water until just pierce-able, about 15 minutes, drain. 2. Slice potatoes into a bowl, season to taste with salt and pepper, and pour the wine and oil over them. 3. Allow potatoes to cool, then toss with vinegar, parsley, and scallions.
