Whole Wheat Pasta with Arugula and Garlic

Ingredients

  • 4 garlic cloves, thinly sliced
  • 5 ounces arugula, roughly chopped
  • a pinch of sea salt
  • 1/2 pound whole wheat pasta
  • 4 tablespoons extra virgin olive oil
  • 1 teaspoon red pepper flakes (optional)
  • 4 tablespoons parmesan cheese
  • 4 teaspoons extra virgin olive oil to finish

Directions

Prep: 1. Slice garlic. 2. Chop arugula. Make: 1. Cook pasta in large pot of boiling water. 2. While pasta cooks, heat olive oil, garlic and red pepper in a pan; cook for about 2 minutes. 3. Add arugula and cook until wilted. Scoop out a little water from the pasta pot and add it to the pan. Continue cooking greens, garlic, and red pepper on low heat. 4. When pasta is al dente, drain and add it to the pan with the greens. 5. Toss everything together with a pair of tongs. Serve: Sprinkle with cheese, and drizzle extra-virgin olive oil over top before serving.
