Prep: 1. Halve cherry tomatoes. 2. Slice basil and mince garlic. Make: 1. Mix in a large bowl: cherry tomatoes, olive oil, garlic, basil, red pepper flakes, salt and pepper. 2. Cover with plastic wrap, and set aside at room temperature. 3. Cook pasta al dente according to package directions. 4. Drain pasta, add to the bowl with the cherry tomatoes; season to taste. 5. Add a few fresh basil leaves; toss well. Serve: Topped with basil leaves.
We can't resist topping this with grated parmesan cheese. If you have time it is even better when the tomatoes are allowed to sit at room temperature for 4 hours.
