Prep: 1. Cut pomegranate in half and soak in water. 2. Whisk olive oil, orange juice, white wine vinegar, salt and pepper in bowl to blend. (Can be made 1 day ahead. Chill. Bring to room temperature and re-whisk before using.) Make: 1. Deseed pomegranate. 2. Toss arugula with enough dressing to coat, top with pomegranate seeds and serve.
