Prep: 1. Chop onions, peppers, celery. 2. Slice sausage. Make: 1. Heat oil in a large skillet over medium heat. Add onion, pepper, and celery and cook, stirring occasionally until vegetables are soft (about 3-5 minutes. (This can easily be done ahead of time). 2. Add vegetables and all remaining ingredients (excluding hot sauce) to the slow cooker. Stir well. 3. Cook on low for 10 hours or high for 4. 4. About 20 minutes before serving, cook rice according to instructions. 5. Chop scallions. 6. Serve topped with scallions and hot sauce.
