Prep: 1. Boil water for pasta. 2. Slice napa cabbage, red cabbage, bell peppers, scallions. 3. Chop cilantro, garlic, and jalapeno. 4. Juice lime. Make: 1. Cook linguine according to package, rinse with cold water and let cool. 2. For dressing, whisk lime juice, olive oil, soy sauce, sesame oil, brown sugar, ginger, garlic, and jalepeño (if using). 3. Toss all veggies together in a large bowl with noodles. 4. Dress only the amount you will be eating and keep dressing separate when storing leftovers.

The best part is that you can make any number of adjustments based on what you have on hand - use any long skinny pasta or any greens you have in place of the spinach. If you have them on hand try adding 1 cup of chopped peanuts to this.
