Chocolate Coconut Truffles

Ingredients

  • 1 1/2 cups pitted dates (about 8 ounces)
  • 3 tablespoons unsweetened cocoa powder
  • 3 tablespoons unsweetened shredded coconut, plus 1/2 cup for garnish
  • 1 teaspoon espresso powder (optional)

Directions

Make: 1. Combine all ingredients in a food processor and blend until well combined and stuck together. If needed, add a little water, 1 teaspoon at a time until mixture is smooth and sticky. 2. Form mixture into 1 inch balls and roll in coconut.

Notes

These are best stored in the refrigerator.
