Prep: 1. Slice onions and garlic. Make: 1. Cook turkey sausage in large skillet. When halfway done, slice sausages into small rounds (roughly 1/2- 1 inch long) and then finish cooking. Can do few hours ahead). Remove turkey from heat and set aside. 2. In large pot with a lid, heat olive oil on medium heat, add onions and garlic and saute until onions are softened (but not browned). About 3 minutes. 3. Stir into the large pot: tomatoes, beans, spices (chili, cumin, coriander, bay leaf, salt and pepper to taste), tomato paste, and add back the cooked sausages. 4. Simmer, with lid on, stirring occasionally, for at least 15 minutes. Longer is ok but beware liquid evaporating or it will burn. Meanwhile, chop cilantro. 5. Serve topped with sour cream and chopped cilantro.
This is a great hearty meal for cold winter days! We like to garnish it with a dollop of sour cream or plain greek yogurt as well.
