Prep: 1. Cook quinoa: combine quinoa and water, bring to a boil, reduce heat and simmer for about 10-15 minutes or until quinoa has absorbed all the water (or make in a rice cooker). 2. Meanwhile, finely chop onions and parsley, mince garlic. 3. Preheat oven to 350 and grease large baking sheet. Make: 1. In a large bowl, mix well: ground turkey, cooked quinoa, chopped onion, garlic, parsley, dried chile flakes, soy sauce, oregano, ground pepper and egg. 2. Form meatballs into approximately 1 inch balls and place on prepared baking sheet 3. Bake until firm and cooked through, about 20 minutes. 4. Serve meatballs in lettuce leaves.
