Roasted Potatoes

Ingredients

  • 4 medium russet potatoes, diced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons sea salt

Directions

Prep: 1. Preheat oven to 400. 2. Slice potatoes (large dice is best). Make: 1. Mix potatoes with olive oil and salt in bowl. 2. Spread on baking sheet; bake for about 30-40 minutes or to desired doneness. We like them golden and crispy on the outside and soft in the middle.
