Penne with Broccoli, Walnuts and Edamame

Ingredients

  • 4 cloves of garlic, minced
  • 4 cups broccoli, chopped
  • 1/4 cup chopped fresh herbs (basil, oregano or thyme)
  • 3/4 cup walnuts, toasted and chopped
  • 3/4 lb of whole wheat penne pasta
  • 3 tablespoons extra virgin olive oil
  • 1 cup frozen shelled edamame
  • sea salt and freshly ground pepper, to taste

Directions

Prep: 1. Mince garlic. 2. Chop broccoli and herbs. 3. Toast and chop walnuts. Make: 1. Boil water and cook pasta to al dente. 2. While pasta cooks, heat 2 tablespoons olive oil in a pan; briefly sauté garlic. 3. Add broccoli and 1/2 cup of water; cook over high heat for about 2 minutes. 4. Add edamame, herbs, salt and pepper to taste; stir to combine. 5. Cook about 5-7 minutes, adding water as needed, until broccoli is bright green and crisp. 6. Mix in a serving bowl: cooked pasta, veggies, walnuts and an extra drizzle of olive oil. Serve: topped with shredded parmesan cheese if desired.

Notes

If you can't find edamame, frozen peas work just as well.
