Linguine with Lemon, Garlic, and Thyme Mushrooms

Ingredients

  • 4 cups sliced cremini mushrooms
  • 1 clove garlic, minced
  • 1/2 cup chopped fresh parsley
  • 1/3 cup extra-virgin olive oil
  • 1 1/2 teaspoons sea salt
  • 1 lemon, zested and juiced
  • 1 teaspoon fresh thyme leaves
  • 1 pound linguine
  • 3 tablespoons parmesan cheese, or to taste
  • 1/4 tsp ground black pepper, or to taste

Directions

Prep: 1. Slice/mince/chop: mushrooms, garlic, parsley. 2. Zest and juice lemon. 3. Boil pot of water for pasta. Make: 1. Mix in a bowl: sliced mushrooms, olive oil, salt, garlic, lemon juice and zest, and thyme leaves. 2. Cook pasta according to instructions; drain and add to bowl with the mushroom mixture. 3. Toss everything together, then add parsley, cheese, salt and pepper to taste.
