Asparagus Basil Salad

Ingredients

  • 1 pound asparagus, trimmed and halved
  • 1 cup grape tomatoes, halved
  • 1 ripe avocado, cut into cubes
  • 1 cup fresh basil leaves, sliced
  • 1/4 cup extra virgin olive oil
  • 1/4 lemon, juiced
  • 2 teaspoons dijon mustard
  • sea salt and freshly ground pepper, to taste

Directions

Prep: 1. Trim/chop: asparagus, tomatoes, avocado, basil. 2. Juice lemon. 3. Boil water for asparagus. Make: 1. Steam asparagus 5-7 minutes. 2. Whisk together olive oil, lemon juice, mustard, salt and pepper to taste. 3. In a large bowl mix asparagus, tomatoes, avocado, and basil. 4. Drizzle dressing over salad and serve.
