Prep: 1. Clean and peel shrimp. 2. Chop/slice: asparagus, chile pepper, bell pepper, garlic. 3. Peel and grate fresh ginger; mix together soy sauce, sherry and ginger. Make: 1. Heat 1 teaspoon sesame oil over medium-high heat in a skillet or wok. 2. Add shrimp and cook until white, about 3 minutes. Remove from pan, set aside. 3. Add remaining 1 teaspoon sesame oil to pan. 4. Add asparagus; cook, stirring, 5 minutes or until tender-crisp. 5. Add garlic and peppers; stir another minute. 6. Add shrimp back into the pan, add soy/sherry/ginger sauce, mix another minute, season to taste with salt and pepper. Serve over rice if desired.
