Carrots with Ginger and Lemon

Ingredients

  • 8 carrots, peeled and sliced
  • 4 tablespoons extra virgin olive oil
  • 1 lemon, juiced
  • 2 teaspoons fresh ginger, finely chopped
  • 1/2 teaspoon salt more if desired

Directions

Prep: 1. Boil water for carrots. 2. Juice lemon. 3. Mince ginger. Make: 1. Boil carrots until they reach desired doneness - 2-3 for still crisp, 5-7 for soft. 2. Mix remaining ingredients together and pour over carrots. 3. Serve still warm or chilled.
