Prep: 1. Thinly slice cabbage and kale. 2. Core and slice the apple (peel if desired), reserving 1/4 for the dressing. 3. Juice lemon and peel garlic and ginger. Make: 1. In a large salad bowl add the sliced cabbage, spinach, and kale. Top with apple slices. 2. Make the dressing: In a food processor or blender, combine the lemon juice, garlic, the apple quarter, the ginger. Blend well. Slowly whisk in the olive oil. Season to taste with salt and pepper. 3. Toss the salad with the dressing and serve immediately.
This is great with any greens! This hearty side also makes a great vegetarian main dish.
