Halibut with Radish Relish

Ingredients

  • 1 bunch radishes, trimmed and finely chopped
  • 1 green onion, trimmed and thinly sliced
  • 2 tablespoons drained capers, chopped (optional)
  • 1 lemon
  • 4 (3-ounce) skinless halibut fillets
  • 1/8 teaspoon fine sea salt
  • 1/8 teaspoon ground black pepper
  • parchment paper

Directions

Prep: 1. Preheat oven to 400. 2. Chop radishes, green onions, and capers. 3. Thinly slice 1/2 lemon, reserving other half for juice and zest. 4. Cut parchment paper into 4 (14-inch) squares and fold each piece of paper in half, then unfold and place on a baking sheet. Make: 1. Place one halibut fillet on each piece of paper, to one side of the crease. 2. Top fillets with salt, pepper, and lemon slices. 3. Fold paper over to completely cover ingredients, then fold along outer edges until all open sides are secure. 4. Bake 15 min. or until cooked through. 5. For relish, mix radishes, green onion, capers, 1 tablespoon lemon juice, and 1/4 teaspoon grated lemon zest. 6. To serve, place each sealed pouch on a plate. Use scissors to carefully cut an opening on the top, peel back paper and evenly divide radish relish among fillets.
