Grilled Artichokes

Ingredients

  • 3 whole artichokes
  • 1 lemon
  • 1 tablespoon sea salt
  • 1 tablespoon whole peppercorns
  • 6 cloves garlic
  • 3 tablespoons extra virgin olive oil

Directions

Prep: 1. Preheat grill to medium. 2. Fill a large pot with enough water to cover the artichokes and bring to a boil. 3. Trim stems off the artichokes and slice in half lengthwise. 4. Grate lemon zest, cut lemon in half. 5. Crush the garlic. Make: 1. Squeeze lemons in boiling water and drop rinds in; add salt, pepper, and garlic. 2. Gently put artichoke halves into the water; lower heat to a simmer. 3. Cook 15-20 minutes or until leaves pull away when tugged, turning artichokes over half way through. 4. Remove artichokes with tongs and drain on a towel; let sit until cool enough to handle. 5. Remove and discard the fuzzy choke. 6. Brush the cut side with olive oil. 7.Place cut-side down on the grill and cook about 3 minutes or until grill-marks form. Serve with melted butter or aioli.

Notes
