Prep: 1. Chop/mince/slice: garlic, red bell pepper, green onions, fresh cilantro and avocado. Make: 1. Sauté garlic in olive oil until fragrant. 2. Add salsa, beans, red pepper, cumin and salt. 3. Simmer until thickened, about 10 min., then stir in green onions. 4. Meanwhile, fry eggs sunny side up. Season with salt and pepper. 5. Warm tortillas and top with a spoonful of bean mixture, fried egg, extra salsa, chopped cilantro and avocado slices.
