Prep: 1. Bring water to a boil. 2. Trim asparagus. 3. Juice lemon. 4. Slice shallot. Make: 1. Mix: 1 tablespoon lemon juice, mustard, oil, salt, pepper, and sliced shallot. 2. Steam asparagus spears over boiling water until fork-tender, about 5-6 minutes; drain. 3. Toss asparagus with dressing.
